Cabernet Sauvignon has been a flagship at Opolo for more than a decade. During this time, Paso Robles has risen to global recognition as a world-class region for this iconic Bordeaux variety. We source Cabernet Sauvignon from our estate Willow Creek District vineyards as well as select sites across the region to create an exemplary expression of Paso Robles Cabernet Sauvignon.

Winemaker's Notes

The 2022 Cabernet Sauvignon presents aromas of ripe plum, bramble fruits, black cherry and chocolate with suggestions of leather and black tea. The mouthfeel is weighty, showing soft, expansive flavors of blackberry, blueberry, cherry liqueur, herbs and vanilla bean spices. The finish is chewy and integrated with fine acidity and smooth tannins.  

Food Pairing

Pairs well with Gorgonzola cheese.
