Tasting Notes

A Port style red wine, Tryst combines the grapes from our finest vineyards with our estate brandy for the perfect after dinner experience. Fortification is accomplished by the addition of brandy, produced by Opolo’s own distillery, partway through fermentation to both stop fermentation and increase the alcohol level while preserving the wines natural sweetness. The
wine is then aged in oak barrels with previous vintages blending with newer vintages as it ages in the Solera style for added complexity.

Winemaker's Tasting Notes

Complex aromas of tobacco and tea leaf with dark cherry and crushed blackberry dominate. Rich slinky tannins and a richly broad complex mouthfeel saturate the tongue. Dense and complex. A perfect wine to enjoy after dinner with either a flourless chocolate torte or perhaps a fine cigar.
